I wanted to share this ( stuffed dates ) recipe with my own idea of filling & i have been trying to post for a long time.
While dates are delicious on their own, stuffing the dates are extra delicious & you can stuff with any of your choice eg: cream cheese with nuts , just nuts, etc. Its common for ramdan iftar eaten as a appetizer or you can have as a dessert after lunch or dinner & also given as gifts.
I've used the medjool dates, stuffed with coconut, pistachio's & white chocolate chips & covered the date in dark chocolate .So let's make a no - cook sweet & chewy dates.
I've posted step by step video's, Make these stuffed dates can keep in refrigerator for a longer time & enjoy.
Clean the dates with a wet muslin cloth & remove the seeds from the dates you'll need to open each dates up & remove the seed.
Spoon the filling into each dates & press it firmly.
I like the balance of semi sweet chocolate so I've used dark chocolate. Melt dark chocolate & drop each of the stuffed dates in the melted chocolate & roll gently to coat round the dates, gently remove the dates & place it on a tray one by one & place all the coated dates in the refrigerator for 1 hr.
Place the dates on a cup lining paper before serving or you can store these dates in a air tight container in the fridge.
Method:

Let's make the filling: In a pan add pistachios & sauté when slightly warm add grated coconut & sauté for a few sec .
Remove from flame & add white chocolate chips. Stir for a sec. grind to a coarse powder. Keep 1 tbsp coarse powder aside for garnishing.
Spoon the filling into each dates & press it firmly.
