Radish & Carrot Stuffed Paratha

The simple trick of stuffing vegetables in a parathas is really gr8 & is my all time favorite 😊 Nowadays most of the restaurants serve different types of stuffed parathas for snacks & sometimes there will be paratha festival i go crazy seeing them, i can't taste all of them but i love reading what different veggies the use, even though the preparation of these parathas is very simple & common you will never get the same taste in two different varieties. 



 You can have them for breakfast, lunch,snack or dinner...Have it with garlic pickle or Tomato Pickle ,or curd or tomato sauce or with lots of butter😋 it's yum!!! I often make different type of parathas be it savoury or sweet i hope to share them all...



Those who don't like radish/mooli especially the kids then the best way is hiding them in a paratha can include any veggies i have mixed radish with carrot & both are edible root vegetable...Try them it's very healthy. 



Ingredients - For the stuffing :
  • 200 gm radish / mooli
  • 100 gm carrot / gajar.
  • 3 green chilies.
  • 2 clove garlic.
  • Small piece ginger.
  • 1/2 cup chopped coriander leaves.
  • 2 tbsp oil.
  • 100 gm / 1 onion finely minced.
  • 1 tsp coriander powder.
  • 1/4 tsp turmeric powder.
  • 1/2 tsp chilly powder.
  • 1/4 tsp garam masala powder.
  • 1/4 tsp sugar.
  • 1/2 tsp jeera / cumin seeds.
  • 1tsp salt.
For the dough :
  • 2 cups wheat flour.
  • Salt to taste.
  • Ghee or oil  to apply on paratha.
  • Milk & water.
Method :

In a bowl add the wheat flour salt 2 tsp oil or ghee mix well & make a dough with milk & water ( I mix milk & water equal quantity)& knead to a smooth soft dough.Cover & keep the dough aside for 1/2 an hr.
Meanwhile let's make the stuffing- Crush the green chilies,ginger,garlic & 1 tbsp chopped coriander leaves in a blender & keep aside.




Radish & carrot wash them well,peel the skin.Grate the vegetables radish has lots of juice so squeeze out the water & keep them aside,this step is very important otherwise your parathas will become a mess when you roll out..Squeeze out all the water you possibly can from the radish... 



 Take a kadai or a pan heat add 2 tbsp oil when hot add the jeera / cumin seeds let it crackle now add the minced onions saute them till light brown..



Add the crushed masala & saute them for 2-3 min till u get a lovely aroma, add the coriander powder,turmeric powder,chilly powder, garam masala powder & saute them for a sec.



Add the grated radish, carrot,salt & cook & keep stirring till dry..




Add  my favorite chopped coriander leaves( Most of the parathas i love adding more coriander leaves)& cook till there's no moisture it's important or else the stuffing will come out let it cool completely.


Divide the mixture & the dough into 6 equal portions ðŸ‘† On a floured surface roll out each ball 3'' place the filling in the centre..



Bring the ends together like a parcel to seal it then roll the parcel in the flour & keep aside repeat the same with the other balls. 



Flatten & roll out like a chapati don;t worry if the filling starts oozing out add more flour if necessary to prevent sticking & transfer it on a hot tawa & fry on medium heat apply oil or ghee until brown spots appear evenly on the surface of the paratha.
While frying roll the next dough ball & repeat until you have 6 soft tasty parathas😋




Serve hot with yogurt garlic pickle!!!😋
