Saffron Ghee Rice

Basmati rice & saffron is the best combination & cooked in ghee the flavor is so aromatic 😋 Garnish with fried onions, carrot & dry fruits looks wonderful 👍 & gave a twist of Kerala style by adding coconut milk in the end & kept it for dum 😊 😋 Goes well with any veg or non-veg curries.


Serves : 4
Ingredients:
  • 2 cups basmati rice.
  • 2 & 1/4 cups water.
  • 2 + 1 medium onion thinly sliced.
  • 80 gm carrot cut in julienne.
  • 1/4 tsp saffron & 1/4 cup water.
  • 1/8 cup oil or ghee.
  • 2 tsp salt or according to your taste
  • 1/4 cup thick coconut milk.
  • 1/4 tsp garam masala powder. 
  • Few cashew nuts.
  • Few raisins.
  • 1/4 cup finely chopped coriander leaves. 
  • 1 tsp rose water.
Whole garam masala : 2" stick cinnamon, 2 black cardamom, 2 green cardamom, 4 clove, 1/2 tsp crushed saunf ( fennel) powder & tej patta or   Pandan leaves . 

Method:
  • Wash & drain the water from the rice & keep aside.
  • Soak the  saffron in 1/4 cup hot water  & keep aside.
  • Mix the coconut milk , rose water, garam masala powder & keep aside.
  • Heat ghee or oil in a non-stick pan add 2 thinly sliced onions & when it's about to change the color...
  • Add the carrot julienne & saute for 2-3 min add the cashew nuts & raisins.
  • When the raisins bloats remove from oil & keep aside  on a kitshen towel.

  • In the same pan add whole garam masala & onions & fry till onion is transparent.
  • Add the drained rice & Pandan leaves..

  • Fry the rice for 5 min...
  • Add the hot saffron water, salt & when it boils, cover with a lid & cook... Meanwhile preheat the  oven  180c or heat a tava on a slow flame...

  • Cook till the rice is done & the water is absorbed, remove form flame...
  • Sprinkle coconut milk, garam masala mixture & half of the fried ingredients & fluff it with a fork with a light hand, cover it with a foil or a lid...
  • Bake in pre-heated oven  for 15-20 min or can place the vessel on hot tava for 10-15 min..

MALABARI CHICKEN MASALA

A delicious malabari chicken curry cooked in coconut milk ..Serve hot with Saffron Ghee Rice 😋




Preparation time:15-20 min.
Cooking time:20-25 min.
Serves: 4

Ingredients:
  • 400 gm chicken cut in medium pieces.
  • 1 cup thick coconut milk.
  • 1 cup thin coconut milk.
  • 1 tsp each of ginger & garlic paste,
  • 2 minced green chilies.
  • 1 large tomato puree.
  • 1 tsp crushed peppercorns.
  • 1 tsp garam masala powder.
  • 2 tbsp chopped coriander leaves
  • Salt to taste.
  • 3 tbsp oil  ghee + 1 tsp oil
Ingredients for ground masala:
  • 1/100 onion.
  • 1 tsp khus khus / poppy seeds.
  • 5 cashew nuts.
  • 8 dry red chilies or according to your taste.
  • 1 tbsp coriander seeds.
  • 1/2 tsp jeera/ cumin seeds.
  • 1 tsp saunf ( fennel seeds).
  • 1/2 tsp turmeric powder.
Method:
  • Wash, drain the chicken & keep aside.
  • Heat 1 tsp oil in a pan add the onions & saute till transparent.
  • Add the coriander seeds & keep stirring for 3 min till the onions are light brown.

  • Add the cumin seeds,khuskhus,fennel seeds,cashew nuts,turmeric powder & saute for another 2-3 min..Off the flame.

  • Add the red chilies & keep stirring till the masala cools down.

  • Grind the roasted masala to a fine paste.
  • Heat ghee in a pan add the green chilies,ginger garlic paste & saute for a min.
  • Add the chicken pieces & fry for 3 to 4 min.
  • Add the tomato puree,ground masala,salt to taste,crushed pepper corns, thin coconut milk,few coriander leaves,1 cup water & cook covered till chicken is tender.
  • Add the thick coconut milk,garam masala powder & simmer on low flame for 5 to 10 min or till the gravy is thick.
  •  Garnish with finely chopped coriander leaves.
Serve hot with  Saffron Ghee Rice  enjoy 😋



MUTTON CURRY IN GREEN MASALA

While i was at the of 18 i had the craze of collecting recipes from magazines or watching cookery shows on t.v. &i used to mix & match them to my taste. Here i am going to share my  mutton recipe in green masala which i cook frequently & goes well with Saffron Ghee Rice .




Preparation time:10-15 min.
Cooking time: 20-25 min.

Serves : 4 
Ingredients:
  1. 500 gm mutton pieces clean & keep aside.
  2. 2 / 160 gm tomato chopped.
  3. 100 gm each 2 onions chopped fine.
  4. Salt to taste.
  5.  1 tbsp + 1/8 cup oil.
  6. 1/2 tsp turmeric powder.
  7. 1/2 tsp peppercorns.
  8. Few chopped coriander leaves.
  9. 8 green chilies or according to taste.
  10. 1 tbsp coriander seeds.
  11. 1tblsp khus khus.
  12. 1 tsp coriander leaves.
  13. 1/4 inch ginger.
  14. 5 cloves garlic.
  15. 1 tsp saunf (fennel seeds).
  16. 40 gm / 1/4 cup grated coconut.
  17. 1 cinnamon.
  18. 2 clove.
  19. 1 cardamom.
Method :

  • let's roast & grind the masala.

  • Heat a pan add 1 tbsp oil add 9 to 19 number  ingredients .
  • Roast on medium flame for 5 - 7 min cool & grind to paste with turmeric powder, peppercorns & grind to a fine paste.


  • Heat 1/8 cup oil in a cooker add the 1 thinly sliced onion,1 slit green chili & fry till golden brown. Remove & keep aside for garnishing.
  • In the same cooker add 1 thinly sliced onion fry till golden brown.

  • Add tomato & saute till well mashed.
  • Now add the mutton, ground masala, 1 tsp salt mix well.

  • Add 1& 1/2  cup water & let it boil.
  • Close the cooker & pressure cook to 3-4 whistle.( the mutton should be properly cooked).
  • Once the pressure is down open the lid the gravy should be thick, garnish with fried onion & coriander leaves
  • Garnish with fried onion, green chilly, coriander leaves.
  • Serve hot with Saffron Ghee Rice  or parathas.

STUFFED LADY 'S FINGER

Lady 's finger know as okra / bhindi , is a spicy masala stuffed lady's finger is delicious in every bite..This recipe i tasted at a wedding  was so tasty but i didn't know the recipe, but my version is i prepared a tomato bhaji  thickened, ground with cashew nuts  & stuffed in lady's finger. Easy & yummy lady's finger is right here try it...



Preparation time: 15-20 min.
Cooking time:10-15min.
Serves : 3
Ingredients:
  • 200 gm medium sized lady's finger.
For the stuffing:
  • 50 gm minced onion.
  • 100 gm chopped tomato.
  • 2 clove garlic.
  • 1/4 inch grated ginger.
  • 1/4 inch cinnamon.
  • 2 clove.
  • 1/2 tsp jeera (cumin seeds).
  • 1/4 tsp fennel/ saunf seeds.
  • 2 tsp red chilly powder or according to taste.
  • Pinch of sugar.
  • 1/2 tsp salt or according to your taste.
  • 1+3 tbsp oil
  • 1/4 tsp turmeric powder.
  • A dash of pepper corns.
  • Few curry leaves chopped.
  • 3-4 cashew nuts.
Method:
  • Wash the lady's finger & wipe them dry with a tissue paper.
  • Make a slit in the lady's finger length wise..

  • Heat 1 tbsp oil in a pan, add jeera. fennel / saunf seeds, minced onion, ginger,garlic, cloves, cinnamon& fry till nearly brown.
  • Add tomato, salt, turmeric powder, chilly powder... 
.
  • Cook till the tomatoes are mashed & dry.
  • Take off flame & let it cool, check the salt & add to a blender....
  • Add cashew nuts & grind to coarse paste..
  • Stuff the ground paste into the slit made in the lady's finger..
  •  Heat 3 tbsp oil in a pan lay the stuffed lady's finger sprinkle a pinch of salt over it & fry on medium flame...

  • When it's done flip it over the other side..
  • If the ground paste remains mix it with the lady's finger & stir it for a few min till dry.
  • Transfer on to plate..Serve hot it's yummy!!! I hope you will enjoy it 😋
