Stuffed chocolatey Dates

 I wanted to share this ( stuffed  dates ) recipe  with my own idea of filling & i have been trying to post  for a long time.

While dates are delicious on their own, stuffing the dates are extra delicious & you can stuff with any of your choice eg: cream cheese with nuts , just nuts, etc. Its common for ramdan iftar  eaten as a  appetizer  or you can have as a dessert after lunch or dinner & also given as gifts. 


I've used the medjool dates, stuffed with coconut, pistachio's  &  white chocolate chips  & covered the date in dark chocolate .So let's make a no - cook  sweet & chewy dates.

I've posted step by step video's, Make these stuffed dates can keep in refrigerator for a longer time & enjoy.  

Method:



Clean the dates with a wet muslin cloth & remove the seeds from the dates you'll need to open each dates up & remove the seed.




Let's make the filling: In a pan add pistachios & sauté when  slightly warm add grated coconut & sauté for a few sec .
Remove from flame & add white chocolate chips. Stir for a sec. grind to a coarse powder. Keep 1 tbsp coarse powder aside for garnishing. 



Spoon the filling into each dates & press it firmly.


I like the  balance of semi sweet chocolate so I've used  dark chocolate. Melt  dark chocolate & drop each of the stuffed dates in the melted chocolate 
& roll gently to coat round the dates, gently remove the dates & place it on a tray one by one & place all the coated  dates in the refrigerator for 1 hr.



Melt white chocolate & drizzle over the dates & sprinkle the dates with the kept aside filling,


Place the dates on a cup lining paper before serving  or you can store these dates in a air tight container in the fridge.
Try this no- cook dessert & enjoy.

Atta Banana Cake With Dry Fruits


A delicious banana cake made with whole wheat flour & dry fruits a bit healthier quick & easy to make.

I'm a big fan of banana cake when its over ripe i just mash them & ready to make a easy banana cake.
I've already posted a similar  Banana cake .





Ingredients :
  • 300 gm over ripe bananas.
  • 200 gm whole wheat flour.
  • 40 gm each of walnut , almonds & cranberry.
  • 1/2 cup refined oil or any other oil.
  • 1 tsp baking powder.
  • 1/2 tsp baking soda.
  • 3 eggs.
  • 1/4 tsp cinnamon powder.
  • 200 gm brown sugar.
  • 1/8 cup Luke warm water.
METHOD:

  • Grease a loaf pan with butter & line it with parchment paper.


  • Chop the dry fruits roughly , Add the cranberries & mix well with 1 tbsp flour. Pre- heat the oven for 170 C .



  • In large bowl add the bananas & mash them well as you can see in the video ☝ next add all the ingredients ( except ) the dry fruits & beat well till smooth .
  • Next fold in  the dry fruits & 1/8 cup Luke warm water & mix well with the spatula.  
  • Transfer the batter into the lined loaf tin & garnish with chopped walnuts. bake in 190 c for 45 mins or until a wooden skewer inserted into the center comes out clean .
  • Remove from the oven & let it cool in the pan for a few min.Then remove from the pan & let it cool completely before serving .
  • Slice & serve 😋 stays in refrigerator for 1 to 2 weeks serve warm.

HOMEMADE PANEER

 Making paneer at home is at home is much easier & have no preservatives 0r corn starch & you can have fresh ,soft paneer.

With few ingredients & making it in whole cream milk & a paneer mould  it's like you bought from a store. 


I

Ingredients :

  • 2 Liters whole cream milk
  • 2 Juicy lime.

Method :
  • Pour 2 liters milk in a heavy bottomed pot & bring to a boil.
  • When the milk comes to a boil turn off the flame& add lime juice give a gentle stir. cover with a lid for 2 min.
  • Milk begins to curdle ( if it doesn’t curdle add more lime juice & allow it to boil once more.) & solids separate from the whey. turn off the flame.
  • As you can see in the video place a paneer mould on a colander layer the paneer mould with a clean cheese  or muslin cloth.
  • Transfer all the curdled milk on the paneer mould. Once all is drained pour cold water to remove the acidic flavor.
  • Rinse the paneer well a 2 times in cold water.
  • Close the paneer with the cloth & cover with the paneer mould lid & place a heavy object over it & keep aside for a few min to drain the excess whey.
  • Remove the paneer block on a plate & refrigerate for a few mins .
  • The paneer is ready. Cube the paneer use fresh or refrigerate for further use.

Saffron modak stuffed with dry fruits

 Modak a popular Prasad offered to lord Ganesha during Ganesh chaturthi. The traditional way of making modak is made of coconut & jaggery & til seeds .

Now there are different ways of making modak & today I share a modak stuffed with dates,coconut ,coconut sugar a natural sweetener with dry fruits & til seeds .



 Ingredients : 

  • 1 cup raw rice flour.
  • 1 1/2 cup water.
  • 1 tsp sugar.
  • 1/2 tsp salt or according to your taste.
  • 1 cup grated coconut.
  • 1/4 cup coconut sugar.
  • 10 dates ( Kajur) or according to your taste.
  • 10 Almonds.
  • 10 pista.
  • 5 cashew nuts.
  • 1/8 cup til seeds.
  • 1/2 cup ghee for the rice mixing, dry fruits &to apply to the modak mould.
  • 1/2 tsp cardamom powder.
  • Few saffron strand’s soaked in 1tbsp water.
Method :
  • Heat a non stick pan add in 1 1/2 cup water, 1 tbsp ghee, salt, sugar & the soaked saffron & let it boil.
  • Once it starts boiling lower the flame & slowly add the rice flour & keep stirring for till it forms a dough off the flame. Cover & keep aside to cool.
  • If the dough is dry add little more hot water.
  • When the dough is cool knead it till soft & keep aside.
  • Meanwhile let’s make the filling. Remove the seeds from the dates & soak them in hot water for a min.

  • Heat a pan add 1 tbsp ghee add the til seeds(sesame seeds) sauté for a few sec.
  • Next add the coconut, soaked dates & all the dry fruits & sauté them for a few sec. Allow it to cool.. 👆
  • Grind them to a coarse paste. 👆


Let’s make the modak:
  • Grease the mould with a bit of ghee then lock the mould. As you can see in the above video👆
  • Make a ball with the rice dough  & press it inside the ball & make a space in the centre so that the rice dough will form a layer touching the walls of the mould.
  • Make a ablong shape of the sweet filling  & stuff it inside the mould.
  • Cover the bottom with the a small piece of the rice dough & smoothen it & seal it applying a little ghee.
  • Slowly unlock the mould & remove the modak gently from the mould, Shape all modak this way with mould or you can simply make a ball shape.
  • Keep the modak covered with a napkin so that the modak doesn’t dry out..
  •  Steam the modals for 10 to 15 mins.
  • Once it’s done remove on serving plate.
  • Mix 1 tbsp milk,sugar,saffron & microwave for 1 min mix well & drizzle over the modak.

Chapati egg sandwich

   A easy & unique sandwich for breakfast. Chapati stuffed with Egg, Tomato , Capsicum, cheese & turned into a sandwich. Try it’s yummy 😋





 Ingredients :

  • 1 chapati  
  • 2 egg
  • Few slices of red, yellow & green capsicum.
  • Cheese slice.
  • 1 small round slice tomatoes.
  • Salt to taste.
  • Pepper powder to taste.
Method :
  • Whip the eggs till frothy add a pinch of salt & keep aside.
  • Heat oil in a pan & add capsicum slices & sauté for a few sec.
  • Place the sliced tomato .
  • Pour the whipped eggs over it sprinkle pepper powder cover & cook on low flame for a few sec.
  • Now here be carefull it’s tricky place the chapti over the omelette & cover the pan with a plate upside down & slowly invert the pan. 
  • Place the pan on the flame & slide the chapati omelette on the pan add cheese slice over the omelette & fold the chapati omelette & fry on both sides applying butter & fry till it’s crisp cut in half & serve hot with coffee & avocado slice. 😋

Sweet & Spicy Bimbli Chutney

 Bimbli commonly known as cucumber tree or tree sorrel is one of the common fruit grown in every home . The Bimbli’ s acidic flavour lends itself very well to curries & lentils, It’s commonly used in fish curries. 

The recipe I’m sharing is a sour ,sweet &spicy Bimbli cbutney  a  replica of my Ginger chutney  a side dish . Have it with Biriyani, Saffron ghee  rice or spread it on toast  it’s 😋 yummy.




Ingredients:

  • 750 gm Bimbli.
  • 300 gm jaggery.
  • 250 gm dates without seeds.
  • 1 tsp yellow mustard powder.
  • 1+1/2 tbsp red chilli powder.
  • 1 tsp turmeric powder.
  • Salt to taste.
  • 1tsp ginger powder. 
  • 1 tsp freshly crushed  pepper powder .
For seasoning: 1tsp mustard seeds , 1/2 tsp jeera/ cumin seeds, 1/3 tsp methi seeds. & 1/ 8 cup oil.

Method:
  • Heat a pan add sliced Bimbli , jaggery, yellow mustard powder , red chilli powder , turmeric powder,  dry ginger powder, pepper powder & salt to taste.
  • Close the pan with lid & allow it to cook on medium flame ( Do not add water) Bimbli has its water content cook for a few min.
  • Open the lid once it starts boiling let  it cook for a few min ,add the chopped dates .
  • Cook till it’s reduced ( it should be thick like a jam ).
  • Meanwhile  let’s season heat oil pan add the mustard seeds , when it crackles add jeera & methi seed let it crackle & pour it over the chutney,
  • Simmer for a few min. Off the heat cover it slightly & let it cool .
  • Store it in a bottle & keep it refrigerated  can use it for atleast for 2 weeks.
It’s yummy have it with paratha & dal  or with  or use as a spread on a toast 😋

Ragi idiyappam / string hoppers

Ragi also known finger millet high in proteins and a natural grain for weight loss agent & has loads of calcium. So let's cook a healthy ragi idiyappam goes well with coconut  & sugar or Potato stew  or Egg Stew 😋

 

Ingredients :

1 cup Ragi flour.

1/4 cup Rice flour

1/ 2 tsp salt.

1/4 cup oil.

Hot boiling water

Method :

  • Heat water to boil, Mean while add Ragi flour, salt , oil in a bowl & mix well.
  • Pour hot water enough to make a dough over it mix well( be careful) the mixture will be hot. & cover it with a lid , Let it sit for 10 mins.
  • After 15 mins open & make a soft dough ( be careful) the mixture will be hot.
  • Now take your string hopper maker fill it with the dough.
  • Grease the plates as you can se in the video & spin the string maker so that you will get the dough  as thin noodles.
  • Stack the noodles plates & steam for 10 mins.
  • Remove & serve it with  Potato stew  or Egg Stew .

Spicy Stuffed Squid

Spicy  Stuffed Squids is served as a starter or as a side dish . The squids are stuffed with tentacles, flaps  of the squids itself & mushrooms .

Ingredients:
  • 7 Squid .
  • 2 tbsp + 1tbsp oil.
  • 100 gms mushrooms.
  • 2 minced green chilies.
  • 1+1/4 ginger garlic paste.
  • 100 gm onions.
  • 100 gm tomatoes.
Method:
  • Clean the squids & clean the pockets well.
  • Cut the flaps & tentacles & mince finely.
  • Mince the mushrooms .
  • Marinate the flaps & tentacles in red chili powder, turmeric powder, salt mix well & keep aside.
  • Heat a pan add 2 tbsp oil & add the marinated flaps, tentacles stir & cook till dry.
  • Add the minced mushrooms & cook till dry & keel aside.
  • Add the sautéed mixture in piping bag & cut at the edge
  •  Stuff into the squid pocket & seal the edges with the tooth pick.
  • Prick the squid with the fork so it doesn't burst while frying. 
  • In the same pan add oil add the stuffed squid  & fry on both sides for 3 sec.
  • Add 1 tbsp red chilli powder, 1/4 tsp turmeric powder, salt to taste, 1/2 cup water & cook on both sides till dry & the masala coats the squid.
  • Serve hot as a side dish or as a starter.

Chicken curry for Kori roti( Kori gassi for Kori roti)

 The best  of Mangalore chicken curry Known as kori gassi. Creamy, spicy curry eaten with Mangalore's famous Kori roti 

Ingredients:

  • 500 gm chicken ( cut in medium pieces)
  • 1 cup thick coconut milk.
  • 2 cups thin coconut milk.
  • 2 -100gms onions
  • 2 clove garlic
  • 1/2 '' ginger
  • 5 byadgi red chilies.
  • 2 tbsp Kundapuri masala powder
  • 1/2 tsp turmeric powder.
  • 1 tsp salt.
  • 2 medium tomatoes ( puree).
  • 1/8 cup finely chopped coriander leaves.
  • 1/8 cup coconut oil.
  • Few curry leaves.
Method :
  • Wash the chicken & keep aside.
  • Heat 1 tbsp coconut oil in a pan, add 1 -100 gm thinly sliced onion.
  • Sauté till brown, add in 2 clove garlic, 1/2 '' ginger, 5 byadgi red chilies, 2 tbsp kundapuri masala powder & 1/2 tsp turmeric powder & sauté for 3 sec . Off the flame & allow it to cool.
  • Grind roasted ingredients to a fine paste.
  • In a pressure cooker pan add the chicken pieces, the ground masala paste, salt ,mix well & marinate for 1/2 an hr.
  • After 1/2 an hr add 2 cups thin coconut milk, tomato puree ,1/2 cup masala water, on the flame & allow it to boil , add  chopped coriander leaves & close the cooker & cook up to 2  whistles & off the flame.
  • When the pressure is down open the lid & allow it to simmer on low flame.
  • In another pan add 1/8 cup coconut oil add  1 thinly sliced onions fry till golden  brown add curry leaves & keep aside.
  • Add 1 cup thick coconut milk & mix well ,now add the fried onions & let it simmer for a few 5 mins.
  • Serve hot with kori rotti.

Sweet Potatoes & Methi Subzi

 A healthy subzi made with sweet potato & methi leaves an excellent combination of two super ' foods & easier to make & have it for breakfast or dinner with paratha.  😋

Ingredients:
  • 2 large sweet potatoes.
  • 2 cups chopped methi leaves.
  • 1 / 100 gm minced onions.
  • 2 tbsp cup oil.
  • 1 tbsp jeera/ cumin seeds.
  • 1/2 tsp ajwain.
  • 1 minced green chilis.
  • 1/2 tsp ginger paste.
  • 1 tsp garlic paste.
  • 1 / 100 gm minced onion.
  • 1/4 tsp turmeric powder.
  • 1 tsp coriander powder.
  • 1 tsp red chili powder.
  • 1 tsp salt.
Method:
  • Boil the potatoes peel & cut into cubes
  • Heat a pan add  oil add 1 tbsp jeera / cumin seeds,1/2 tsp ajwain & minced green chilies.
  • Give it a stir. Add ginger, garlic paste sauté for a sec.
  • Add the minced onions sauté till light brown.
  • Add the cooked chopped sweet potatoes mix well.
  • Add the jeera powder, turmeric powder, coriander powder& red chilly powder, salt & mix well.
  • Pour lime juice mix, next add the chopped methi leaves.
  • Mix well cover with a lid  let it simmer for 5 min
  • Add kasuri methi give a stir & serve hot .

Rice Dumplings Stuffed with Prawns

 Here's something extraordinary  snack for all of you who can't get enough prawns... Prawns stuffed in rice dumplings is a  spicy snack steamed & fried marvelous with a cup of tea..  Luckily it's not difficult too make this recipe at home..You can use shrimp for this recipe if using prawns minced it finely.. So let's try it..





Ingredients:
  • 150 gm prawns or shrimp.
  • 2 medium size.
  • 2 green chilies minced.
  • Few curry leaves minced.
  • 1 tsp ginger garlic paste.
  • 1 large tomato chopped.
  • 14 tsp turmeric powder.
  • 12 tsp jeera powder.
  • 1 tsp coriander powder.
  • 1 tsp red chili powder.
  • 2 tbsp coconut oil.
  • oil to shallow fry.
  • Salt to taste.

  •  In a pan add 2 tbsp oil add the minced green chilies, minced garlic, grated ginger &sauté for a sec.
  • Add the minced onion & fry till light brown.

  • Add all the masala powders & sauté for 1 min.
  •  Next add the  minced prawns fry for 2 min.

  • Add the chopped tomatoes. 
  • Cook till dry there should be no moisture.

  • To assemble the dumplings take a large lemon size rice dough place it on your palm & spread like a poori spoon 1 tbsp of the prawn filling on the center( do not over fill)


  • Now fold the edges & wrap it & gently pat with fingers to give a spindle shape & arrange on a plate. 

  • Repeat the the steps till all the fillings is used up. Steam them in a steamer till done.

  • Allow it to cool. Meanwhile make a paste of 2 tbsp of kashmiri chili powder, 1/2 tsp turmeric powder & salt to taste.
  • Rub the paste on the dumplings & keep aside for 5 min to marinate.

  • Shallow fry the dumplings till crisp & brown.
  • Serve hot with a hot cup of tea..😋😋😋

Rava Upma ( Kerala Style )

It's been a long time since i posted a recipe in my cook book,Too busy to post & i was wondering what to post...
Ok this time it's a very traditional rava upma recipe or you can say upumava also ,I prefer to call this recipe upma... Upumava in Malayalam  means upu salt & mavu means mango tree so other than the recipe name its also called salt- mango tree 😁
Kerala style uppama is nothing gr8 to write about but it was a hi-fi to me to see auntie cooking just by sprinkling hot water as the rava cooks slowly by stirring frequently  to a perfect soft texture.
If you don't get your uppamavu in the desired  texture ( becomes sticky & lumpy ) then go ahead & give this a try...

Ingredients
  • 1 cup rava.
  • 1 small size carrot.
  • 1 medium size onion.
  • 2 green chilies.
  • 1/2 tsp grated ginger.
  • Few curry leaves.
  • 1 tsp mustard seeds.
  • 2 whole red chilies.
  • 3 cups hot water to cook rava.
  • 1/2 tsp salt or according to your taste.
  • 1 tbsp sugar.
  • 2 tbsp oil.
  • 1 tbsp ghee.
  • 1 ripe kerala banana ( nandrakai)
Method :
  • Chop the onions,green chilies & carrot finely.
  • Roast the rava on medium heat for around 5 minutes stirring continuously but it shouldn't turn brown. Remove from the pan & transfer to a plate.
  • Microwave the banana on high power for 2 min till soft immediately spread ghee & sugar over it & keep aside.

  • In the same pan add 2 tbsp oil add mustard seeds & let them pop. Then add the curry leaves & red chilies saute for a sec.

  • Next add the minced onion, carrot, green chilies & grated ginger & fry them till onion are soft & translucent.
  • Meanwhile keep the water to boil.

  • Add the roasted rava & salt stir for a sec.



  • Now little by little hot water & keep stirring to avoid lumps & cook till the rava cooks & the grain are separated & dry & moist
  • Next add sugar, ghee & mix well....Cover with a lid  & off the flame.
  • Let it settle for a few mins....Your simple tasty breakfast is ready.
  • Serve hot with banana 😋

Veg Dosa Roll / Spring Roll

I first had the dosa spring roll served on a bed of raw shredded cabbage when we went to a restaurant that  boosts over 10 dosa rolls with different fillings on their menu....I choose the veg spring roll dosa & it tasted delicious & i mentally bookmarked  this idea to try this recipe at home next time i make dosa 😁
If you have dosa batter & some vegetables, pizza sauce or mayonnaise you can make this tasty dosa roll & serve it with tomato ketchup or chutney, kids will surely love who am i kidding i love dosa roll & make it often for breakfast or as a evening snack.So try this easy dosa roll / spring roll & get ready for the compliments!!! 😋



Ingredients :
  • 100 gm carrot cut in julienne. 
  • 100 gm cabbage cut in julienne.
  • 40 gm each of red yellow green capsicum ( cut in thin slices)
  • 1 tbsp pizza sauce or
  • 1 tbsp mayonnaise
  • 2 green chilies minced.
  • 1/2 tsp sambar powder or any curry powder.
  • Few finely chopped coriander leaves.
  • 1 tbsp oil.
  • Dosa batter.
Method : Filling for the dosa roll...

  • Heat oil in a pan add the minced green chilies saute for 2 min.
  • Add the carrot & saute on high flame for 3-4 min.
  • Add the  cabbage & cook for 5 min.
  • Next add the sliced capsicum stir & cook for 2 min.
  • Next add the salt, sambar powder & chilli powder( if required)& saute for few more min.
  • Allow it to cool on a plate. The filling for the dosa is ready.
  • Heat a dosa pan & grease with oil about 1/2 cup dosa batter & spread into not too thick or thin dosa & cook it as usual u make dosa .
  • Next spread  some pizza sauce or mayonnaise.
  • Layer some of  filling in a line in the center of the dosa ( if you like add some cheese spread on the filling as you can see in the 2nd image).
  • Gently fold the dosa into a roll & fry both the sides till it's crispy.
  • With a pizza cutter slice into two piece. 
  • Transfer on to a plate drizzle it with tomato sauce or with chutney & serve hot.

Dry Fruit Nankhatai

Dry fruit   flavored nankhatai !!!! Here I've used dry kiwi,raspberry, cranberry,papaya &strawberry.  


Ingredients :
  • 200 gm maida.
  • 100 gm chiroti rava.
  • 100 gm butter or ghee.
  • 150 gm sugar.
  • 2 tbsp curd.
  • 1 tsp cardamom powder.
  • 1/4 tsp baking soda.
  • 100 gm mixed dry fruit,
  • 4-5 tbsp milk ( if required )
Method :
  • Pre heat the oven 200 C degrees.
  • 100 gm dry fruit use dry fruits like kiwi, raspberry, cranberry, papaya.
  • Chop it finely or crush it in a blender
  • In  bowl add the butter or ghee, curd  & sugar using the beater beat till well combined & fluffy add maida, sooji, soda, dry fruits & mix well till it  looks like bread crumbs.
  • Add milk (if required ) little at a time to make soft dough  cover & keep aside for 10 min.
  • Make equal size balls from the dough flatten lightly & press a cranberry  in the center & place it in a greased tray & bake it for 30 -40 min or till the bottom is brown.
  • Remove nankhatai from the oven & let it cool completely. 
  • Store in a container & enjoy with a cup of tea 😋
